Raspberry Brownies

Perfectly delectable and more-ish with raspberries to cut through the richness! These are the definitely the best squidgy brownies…


The ingredients: 

185g butter

185g dark chocolate 

100g milk chocolate drops

260g caster sugar

3 eggs (large)

45g cocoa 

80g plain flour

60g frozen raspberries 

The method: 

1. Preheat oven to 180c /160 c fan or gas mark 4. Line a 20cm square tin with grease proof paper

2. Melt the dark chocolate and butter in a heat proof bowl over simmering hot water, till melted and leave to cool slightly 

3. Meanwhile whisk the eggs with the caster sugar (electric whisk) until the mixture becomes paler and doubles in size

4. Fold the chocolate and butter mixture into the egg mix

5. combine the flour and cocoa and then fold into the mixture until combined

6. Finally add the milk chocolate drops and frozen raspberries and stir in. 

7. Pour mixture into tin and bake for 25-30 mins 

8. Leave to cool in tin, then cut into squares
