Simple seafood linguine

Light and a delicious eat

A quick take on the classic dish 

  
Ingredients for 2:

  • 150g of Linguine pasta 
  • 1 small pack of mixed seafood- I had mussels, prawns, squid (150g)
  • 1 small pack of cockles (50g)
  • Handful of cherry Tomatoes
  • Splash of White wine
  • 1 garlic clove 
  • 1/2 tsp Paprika
  • Chilli flakes 
  • Parmesan cheese

The method: 

  1. Cook gently the garlic, paprika and chilli flakes (amount of your choosing dependent on your spice tolerance!)
  2. Add a handful of tomatoes, keeping some aside to garnish and cook for a few minutes 
  3. Meanwhile, pop the pasta in a ban of slightly salted boiling water (I used fresh so around 4 minutes) and cook until almost ready- keep it al dente
  4. Add the seafood to the tomatoes and spiced mixture and cook again for around 3-4 minutes or until cooked
  5. Add a splash of white wine (of your choosing) to make a light sauce. Cook again for a few minutes, until the alcohol burns off 
  6. To serve, run the seafood mixture through the pasta and garnish with the remaining cherry tomatoes and top with Parmesan cheese! 

To fizz up the recipe, add half a tin of chopped tomatoes and 100ml of stock to make a thicker, richer sauce!
