Healthy, filling and delicious!
Ingredients for 4:
- 1/3 of a cup chia seeds
- 1 can of coconut milk
- 1 tsp vanilla extract
- 1 mango
- 2 medjool dates
- Soak overnight, the chia seeds in the can of coconut and vanilla extract and set aside in the fridge (this will form a gelatinous mixture)
- To serve, blitz the mango and medjool dates into a thick purée consistency
- Layer the chia seeds and mango in a glass
- Top with mango chunks and desicated coconut!
