Mango and coconut chia layered dessert

Healthy, filling and delicious! 

The chia seeds have gelatinous properties, when mixed with almond/coconut milk, form an extremely filling dessert or breakfast!

Ingredients for 4:

  • 1/3 of a cup chia seeds
  • 1 can of coconut milk
  • 1 tsp vanilla extract 
  • 1 mango
  • 2 medjool dates

The method: 

  1. Soak overnight, the chia seeds in the can of coconut and vanilla extract and set aside in the fridge  (this will form a gelatinous mixture)
  2. To serve, blitz the mango and medjool dates into a thick purée consistency 
  3. Layer the chia seeds and mango in a glass
  4. Top with mango chunks and desicated coconut!
