Summer Fruit Pavlova

Simple Saturday Food.

Quick and easy. 

Still have time to sit in the sun!





  • 1 meringue (20cm)
  • strawberries
  • blueberries
  • raspberries
  • raspberry coulis
  • mascarpone

The method:    

  1. Top the meringue with the mascarpone and sliced berries.
  2. Add the raspberry coulis and serve immediately

Raspberry Coulis

  • 30ml water
  • 80g sugar
  • 300g raspberries
  1. Heat the sugar and water in a saucepan until the sugar dissolves (5 mins)
  2. Add the raspberries to the mixture and puree 
  3. Sieve to remove the seeds.
