Still have time to sit in the sun!
- 1 meringue (20cm)
- raspberry coulis
- Top the meringue with the mascarpone and sliced berries.
- Add the raspberry coulis and serve immediately
- 30ml water
- 80g sugar
- 300g raspberries
- Heat the sugar and water in a saucepan until the sugar dissolves (5 mins)
- Add the raspberries to the mixture and puree
- Sieve to remove the seeds.
