5:2 Haddock

Perfect for a healthy, light evening meal.

Calorie controlled but doesn’t feel like it!

Ingredients for 2:

  • fillets of haddock (75g each)
  • 2 eggs 
  • 200g spinach
  • salt and pepper, to season

The method:

  1. Preheat oven to 200°C/gas mark 6.
  2. Bake the haddock in the oven, on a baking tray, for 12-15 minutes.
  3. Meanwhile, poach the egg and wilt the spinach leaves in a pan of boiling water. Drain well.
  4. Season well.
