Ingredients for 2:
- fillets of haddock (75g each)
- 2 eggs
- 200g spinach
- salt and pepper, to season
- Preheat oven to 200°C/gas mark 6.
- Bake the haddock in the oven, on a baking tray, for 12-15 minutes.
- Meanwhile, poach the egg and wilt the spinach leaves in a pan of boiling water. Drain well.
- Season well.
